Delightful Huckleberry Coffee Cake

A heartwarming coffee cake featuring sweet and tart huckleberries that evokes nostalgia and joy.

  • 1/4 cup salted butter (softened)
  • 8 oz cream cheese
  • 1 cup white sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 cups huckleberries (or any berry of your choice)
  • 2 tbsp white sugar (for berry topping)
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan.
  3. Cream together softened butter and cream cheese until smooth.
  4. Add sugar and beat until combined.
  5. Mix in the egg and vanilla extract until fully incorporated.
  6. Whisk together flour, baking powder, salt, and cinnamon in another bowl.
  7. Gradually add the dry ingredients to the wet mixture.
  8. Fold in the huckleberries gently.
  9. Prepare the berry topping by sprinkling the huckleberries with 2 tbsp of sugar.
  10. Pour the batter into the prepared cake pan and smooth the top.
  11. Sprinkle the huckleberries evenly over the top and press them in gently.
  12. Bake for 35–45 minutes or until a toothpick comes out clean.
  13. Cool the cake in the pan for about 10 minutes before transferring to a wire rack.
  14. Cut into slices and serve.

Notes

Serve warm, dusted with powdered sugar, or with whipped cream or vanilla ice cream.
