Hamburger Potato Casserole

A cozy and comforting Hamburger Potato Casserole that is perfect for chilly nights, bringing family and friends together around the table.

  • 1 lb ground beef (lean, 85/15)
  • 4 medium potatoes (russet or Yukon gold, peeled and sliced thin)
  • 1 medium onion (finely chopped)
  • 1 to 2 cups shredded cheese (cheddar or mozzarella)
  • ½ cup milk
  • 2 tbsp butter (melted)
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic powder (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the onions in a skillet over medium heat with about 1 tablespoon of butter for about 5 minutes or until soft and translucent.
  3. Brown the ground beef with the sautéed onions, seasoning with salt, pepper, and garlic powder to taste, cooking for 6-8 minutes.
  4. Prepare a medium baking dish (about 9×13 inches) by greasing it with melted butter.
  5. Layer half of the sliced potatoes at the bottom, seasoning lightly with salt and pepper. Add half of the beef and onion mixture and sprinkle with half of the cheese. Repeat the layers.
  6. Mix the milk with the remaining melted butter in a small bowl and drizzle over the casserole.
  7. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden and bubbly.
  8. Let the casserole rest for 10-15 minutes before serving.

Notes

You can add veggies like bell peppers or carrots, or use sweet potatoes for a twist. For a creamy version, stir in cream of mushroom soup before layering.
