Ginger Lemony Fig Preserves

A vibrant combination of sweet figs, zesty lemon, and warm ginger that results in delicious homemade fig preserves.

Ingredients

  • 1 pound figs
  • 1/4 cup lemon juice, freshly squeezed
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh ginger, grated
  • 1 cinnamon stick
  • 1/4 cup honey
  • 1/4 cup sugar

Instructions

  1. Prepare the figs by rinsing, drying, cutting off the stems, and quartering them.
  2. Combine the figs with lemon juice, lemon zest, ginger, cinnamon stick, honey, and sugar in a large pot.
  3. Let the mixture sit for about 30 minutes to macerate.
  4. Cook the preserves over medium heat until simmering, stirring frequently.
  5. Watch for gelling; check if the mixture coats the back of a spoon after 20-30 minutes.
  6. Can and store the preserves in sterilized jars once ready.

Notes

Preserves can last up to a year if properly canned; once opened, consume within a few weeks.
