  • 1 ½ cups (360ml) warm water
  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 3 ¾ to 4 cups all-purpose flour
  • 2 teaspoons fine sea salt
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 810 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups (480ml) whole milk or half-and-half
  • ¾ cup (75g) freshly grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of freshly grated nutmeg
  • 1 ½ cups (170g) low-moisture mozzarella cheese, shredded
  • ½ cup (50g) freshly grated or shaved Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Red pepper flakes (optional)

Instructions

  1. Activate the yeast: In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it’s frothy.
  2. Mix the dry ingredients: In a large bowl, whisk together 3 ¾ cups of flour and salt.
  3. Bring it together: Pour the yeast mixture into the flour mixture along with the olive oil. Mix until a loose dough forms.
  4. Knead the dough: Transfer to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  5. First rise: Grease a bowl with olive oil, place the dough inside, cover, and let it rise until doubled (about 1-2 hours).
  6. Prepare the sauce: Melt butter in a medium saucepan, add minced garlic, and cook until fragrant.
  7. Make it creamy: Sprinkle flour over garlic and whisk to form a roux, then gradually whisk in milk until thickened.
  8. Cheesy goodness: Stir in Parmesan cheese, salt, pepper, and nutmeg until smooth.
  9. Preheat and roll: Preheat your oven to 475°F (245°C) and roll out your dough.
  10. Parbake the crust: Pre-bake the crust for about 5-7 minutes until just set.
  11. Assemble the pizza: Spoon on sauce, sprinkle mozzarella, and top with more Parmesan.
  12. Bake to perfection: Return to the oven and bake for another 10-12 minutes until golden.
  13. Finishing touches: Remove from oven, sprinkle with parsley, and add red pepper flakes if desired.
  14. Slice and serve: Let cool for a couple of minutes before slicing.
