Fresh Fruit Salad with Honey Lime Poppy Seed Dressing

A colorful and refreshing fruit salad featuring juicy strawberries, blueberries, pineapple, and watermelon, dressed in a honey lime poppy seed dressing.

Ingredients

Scale
  • 2 cups strawberries, hulled and sliced
  • 2 cups blueberries
  • 2 cups pineapple, diced
  • 2 cups watermelon, diced
  • 1 cup honey
  • 1 lime, juiced
  • 1 tablespoon poppy seeds
  • Mint leaves for garnish (optional)

Instructions

  1. Prep your fruit: Start by washing all your fruits thoroughly under cool running water. For strawberries, hull them (remove the green tops) and slice them into bite-sized pieces. For the blueberries, give them a gentle rinse and drain.
  2. Dicing pineapple and watermelon: If you’re using a whole pineapple, slice off the skin with a sharp knife, then cut the fruit into quarters, removing the core. Dice the pineapple into small cubes. For the watermelon, slice it in half and scoop out the flesh into cubes. A melon baller works wonders here for those perfect little rounds!
  3. Mixing it all together: In a large bowl, combine all your prepared fruits—strawberries, blueberries, pineapple, and watermelon. Gently toss them together to ensure they’re mixed but still maintain their shape.
  4. Making the honey lime dressing: In a small bowl, whisk together the honey and lime juice until well combined. You want it nice and smooth! If it’s too thick, you can add a splash of water to thin it out slightly.
  5. Add poppy seeds: Stir the poppy seeds into the honey-lime mixture. This adds a delightful crunch that contrasts beautifully with the juicy fruits.
  6. Dress the salad: Pour the dressing over the fruit mixture, using a spatula to gently fold it all together until everything is coated. Be careful not to mash the fruits—this is a salad, not a smoothie!
  7. Chill it out: If you have time, let the fruit salad chill in the refrigerator for about 30 minutes. This allows the flavors to meld beautifully together and makes for an even more refreshing treat.
  8. Garnish and serve: When ready, scoop the fruit salad into individual bowls or pile it high on a large serving dish. If desired, garnish each serving with fresh mint leaves for a pop of color and aromatic freshness.
