  • 2 firm English cucumbers, sliced thinly
  • 8 oz fresh mozzarella cheese, cut into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 10 fresh basil leaves, torn
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Wash the cucumbers and cherry tomatoes thoroughly. Peel cucumbers if desired and slice based on preference.
  2. Chop the cherry tomatoes in half to add color and sweetness.
  3. Slice the fresh mozzarella into pieces, aiming for similar sizes as the cucumber slices.
  4. Tear the fresh basil leaves gently to release essential oils.
  5. Assemble the salad by layering cucumbers, mozzarella, and cherry tomatoes in a large bowl.
  6. Dress the salad with olive oil and balsamic vinegar. Adjust to taste.
  7. Season with salt and pepper to enhance flavors.
  8. Let the salad marinate in the refrigerator for 15 minutes, if time allows.
