Ingredients

Scale
  • 4 green tomatoes, sliced
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk
  • 1 cup cornmeal
  • 1/2 cup bread crumbs (optional)

Instructions

  1. Slice the tomatoes into 1/4-inch thick rounds.

  4. Coat each tomato slice in flour, then dip into the egg mixture, and finally coat with the cornmeal and breadcrumb mixture.
  5. Heat about 1/2 inch of oil in a skillet over medium heat.
  6. Fry the breaded tomatoes for 3-4 minutes on each side until golden brown and crispy.
  7. Drain on paper towels and repeat until all tomatoes are cooked.
  8. Serve warm, stacked with a drizzle of ranch or spicy remoulade.

Notes

For added flavor, experiment with cayenne pepper in the egg mixture or mix in fresh herbs into the cornmeal.
