Easy Cowboy Caviar

A vibrant, flavorful dip or salad that combines beans, fresh veggies, and a zesty dressing, perfect for gatherings.

Ingredients

  • 1/4 cup olive oil
  • 2 Tbsp. lime juice
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. honey
  • 1/2 tsp. garlic powder
  • 1/2 tsp. sea salt
  • 15 oz. can black-eyed peas, drained and rinsed
  • 15 oz. can black beans, drained and rinsed
  • 2 cups corn
  • 1 cup diced bell pepper
  • 1 cup diced tomato
  • 1/2 cup minced red onion
  • 1 cup chopped cilantro

Instructions

  1. Prepare the dressing by whisking together olive oil, lime juice, red wine vinegar, honey, garlic powder, and sea salt in a small bowl.
  2. Rinse and drain the black-eyed peas and black beans under cold water.
  3. Chop the bell pepper, tomatoes, red onion, and cilantro.
  4. Combine the beans, corn, bell pepper, tomatoes, red onion, and cilantro in a large mixing bowl. Pour the dressing over the top and gently toss.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Serve the Cowboy Caviar in an attractive bowl and enjoy with tortilla chips or as a topping for various dishes.

Notes

Customize with jalapeños for heat or diced avocado for creaminess. Let flavors meld by chilling overnight.
