Chocolate Orange Muffins

  • 1 cup granulated sugar
  • ½ cup unsweetened natural cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon table salt
  • 2 large eggs (at room temperature)
  • ½ cup sour cream (at room temperature)
  • ½ cup orange juice (at room temperature)
  • ½ cup vegetable oil
  • 2 tablespoons orange zest
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. Mix the flour, sugar, cocoa powder, baking soda, and salt in a bowl.
  3. Whisk the eggs, sour cream, orange juice, and vegetable oil in another bowl.
  4. Combine the wet mixture with the dry ingredients and fold gently.
  5. Add the orange zest and chocolate chips.
  6. Fill the muffin tin about two-thirds full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes in the pan before transferring to a wire rack.
