Cherry Pie Filling

A simple and delightful cherry pie filling that balances sweet and tart flavors, perfect for pies or desserts.

  • 4 ½ cups (1.5 lb) cherries, pitted
  • ⅓ cup (80 ml) water
  • 2 tablespoons (30 ml) lemon juice
  • ⅔ cup maple syrup (210 g) or honey (226 g) or 1 cup white granulated sugar (200 g)
  • ¼ cup (30 g) cornstarch
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • Pinch of salt

Instructions

  1. Prep your cherries by rinsing them under cool water and pitting them gently.
  2. Combine the pitted cherries, water, lemon juice, and your choice of sweetener in a medium saucepan.
  3. Make the thickening slurry by mixing cornstarch with a few tablespoons of the cherry mixture.
  4. Heat the saucepan over medium heat, stirring occasionally until the mixture simmers.
  5. Add the cornstarch slurry to the bubbling mixture and keep stirring until thick and glossy.
  6. Taste the filling and adjust sweetness if necessary.
  7. Cool the filling to room temperature before storing in an airtight container.
