Classic Blueberry Buckle

A delightful dessert with a soft, cake-like base layered with juicy blueberries and topped with a crumbly streusel.

  • 2 cups cake flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 tbsp butter (room temperature)
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 3 cups fresh or frozen blueberries
  • 1/2 cup sugar (for streusel topping)
  • 1/3 cup cake flour (for streusel topping)
  • 1/2 tsp cinnamon (for streusel topping)
  • 4 tbsp cold butter (cubed, for streusel topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×9 inch baking dish by greasing with butter or cooking spray.
  3. Mix the dry ingredients: In a medium bowl, whisk together cake flour, baking powder, and salt.
  4. Cream the butter and sugar in a large mixing bowl until light and fluffy.
  5. Add the egg and vanilla; mix until well-blended.
  6. Combine wet and dry ingredients, alternating with milk. Stop when no dry flour remains.
  7. Fold in the blueberries carefully.
  8. Pour the batter into the prepared baking dish.
  9. Make the streusel topping by combining sugar, cake flour, cinnamon, and cold butter until crumbly.
  10. Sprinkle the streusel over the batter evenly.
  11. Bake for 45-55 minutes until golden brown and a toothpick comes out clean.
  12. Cool in the pan for about 15 minutes before slicing.

Notes

Serve warm with whipped cream or ice cream. Can be made in advance and stored in an airtight container.
