Blueberry Breakfast Quesadilla

A delicious and easy breakfast quesadilla filled with fresh blueberries, creamy cheese, and a drizzle of honey.

  • 4 small flour tortillas
  • 1 cup fresh blueberries
  • 1 cup shredded mozzarella cheese
  • 4 oz cream cheese (softened)
  • 2 tbsp honey
  • 1 tsp lemon zest
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Greek yogurt or sour cream (for serving)
  • Maple syrup (for drizzling)
  • Mint leaves (for garnish)
  • Extra blueberries (for garnish)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the softened cream cheese, honey, lemon zest, cinnamon, and nutmeg. Blend until smooth.
  2. Spread the cream cheese mixture on one side of a flour tortilla.
  3. Layer fresh blueberries over the cream cheese mixture, followed by shredded mozzarella cheese.
  4. Assemble the quesadilla: Fold the tortilla in half, pressing gently.
  5. Cook the quesadilla on medium heat in a skillet with butter or oil for 3-4 minutes per side.
  6. Slice into wedges and serve warm with Greek yogurt, maple syrup, and extra blueberries.

Notes

Get creative with fillings! You can add nuts, other fruits, or chocolates to customize your quesadilla.
