Savory BLT Chicken Salad

A comforting twist on the classic chicken salad, featuring crispy bacon, cherry tomatoes, and a creamy mayo and mustard dressing.

  • 2 cups cooked chicken, shredded
  • 4 strips of bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the bacon: Fry the bacon strips in a skillet over medium heat until crispy (about 5–7 minutes). Transfer to a paper towel-lined plate to drain. Save a bit of bacon grease for flavor.
  2. Prep the chicken: Shred your cooked chicken into bite-sized pieces and set aside.
  3. Chop the vegetables: Halve the cherry tomatoes and chop the lettuce into bite-sized pieces.
  4. Mix the dressing: In a large bowl, combine the mayonnaise and Dijon mustard, stirring until smooth.
  5. Bring it all together: Add the shredded chicken, crumbled bacon, halved cherry tomatoes, and chopped lettuce to the bowl with the dressing. Season with salt and pepper.
  6. Toss gently: Using two spatulas or a large spoon, gently toss everything together until nicely coated with the dressing.
  7. Taste and adjust: Give your salad a taste to adjust seasoning or add more mayo if needed.
  8. Chill (optional): Cover and let chill in the fridge for about 30 minutes before serving for best flavor.
  9. Serve: Grab your favorite serving bowl or platter, and enjoy!
