Savory BLT Chicken Salad

A flavorful twist on the classic BLT, this chicken salad combines tender shredded chicken, crispy bacon, and fresh vegetables, all brought together with a creamy dressing.

  • 2 cups cooked chicken, shredded
  • 4 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Optional: avocado slices for topping

Instructions

  1. Cook the chicken: If you’re not using rotisserie chicken, poach your chicken breasts in water or broth until fully cooked, about 15-20 minutes.
  2. Crisp the bacon: Cook bacon in a frying pan until crispy and crumble into pieces.
  3. Prep the greens and tomatoes: Rinse and chop romaine, and slice cherry tomatoes in half.
  4. Make the dressing: Mix mayonnaise, Dijon mustard, salt, and pepper in a bowl until blended.
  5. Combine ingredients: Add chicken, bacon, romaine, and tomatoes to the dressing and fold together gently.
  6. Serve with style: Transfer to a serving bowl, top with avocado slices, and sprinkle with extra bacon if desired.

Notes

This salad can be served as a main dish, in a sandwich, or in a wrap. Best enjoyed fresh; store leftovers in the fridge for up to 3 days.
