Easy Green Pea Salad with Bacon and Cheese

A delightful salad that brings together sweet green peas, crispy bacon, and creamy cheddar cheese, perfect for barbecues or quick dinners.

  • 2 cups frozen green peas, thawed
  • 4 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the peas by thawing them. You can either place them in warm water for 5 minutes or refrigerate them overnight.
  2. Cook the bacon in a skillet over medium heat until crispy (about 5-7 minutes). Let it cool before crumbling.
  3. Chop the red onion into small pieces. Soak in cold water for a milder taste if preferred.
  4. Make the dressing by combining mayonnaise and apple cider vinegar in a large bowl, mixing until smooth.
  5. Mix all ingredients together: thawed peas, crumbled bacon, cheddar cheese, and chopped onion with the dressing.
  6. Season with salt and pepper to taste.
  7. Chill the salad in the fridge for at least 30 minutes before serving.

Notes

This salad tastes even better the next day as the flavors meld together. Experiment with additional ingredients like fresh herbs or avocado for a twist.
