Crisp and Colorful Asian Kohlrabi Salad

A vibrant and refreshing salad featuring crunchy kohlrabi and a zesty dressing.

Ingredients

  • 4 kohlrabi, peeled and sliced into matchsticks
  • 6 radishes, sliced into matchsticks
  • 1 mango, chopped
  • 4 green onions, chopped
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped cashews, almonds, or peanuts
  • 1 tablespoon sesame oil
  • 1/3 cup rice vinegar
  • 1 tablespoon honey or sugar
  • 2 cloves garlic, minced
  • 1 small knob of ginger, minced
  • Dash of salt and pepper

Instructions

  1. Prep your veggies by peeling the kohlrabi and slicing it into matchsticks.
  2. Chop the mango and green onions, removing the mango pit carefully.
  3. Prep the fresh herbs and nuts, coarsely chopping the cilantro and optionally chopping the nuts.
  4. Make the dressing by whisking together the sesame oil, rice vinegar, honey, garlic, ginger, and seasoning.
  5. Combine the kohlrabi, radishes, mango, green onions, cilantro, and nuts in a large bowl.
  6. Drizzle the dressing over the salad and mix gently, then let it sit for 10 minutes.
  7. Plate and serve the salad in a colorful bowl, garnishing with extra nuts and cilantro if desired.

Notes

The salad is perfect as a side or light meal. It holds well when made in advance; keep the dressing separate until serving.
