Apple Cider Whoopie Pies

  • 1 teaspoon ground cinnamon

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 cup apple butter
  • 1/2 teaspoon vanilla extract
  • 1 cup bourbon caramel buttercream or brown sugar cream cheese icing
  • Cinnamon sugar, for coating

Instructions

  1. Prepare Your Kitchen: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Make the Apple Cider Reduction: Pour 1 cup of apple cider into a saucepan and bring to a gentle boil, reducing it to about 1/4 of its original volume (15-20 minutes). Let it cool.
  3. Combine the Dry Ingredients: In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Cream the Butter and Sugar: Beat the softened butter and brown sugar together until light and fluffy (2-3 minutes).
  5. Add Egg and Apple Butter: Incorporate the egg, cooled apple cider reduction, apple butter, and vanilla extract.
  6. Mix in the Dry Ingredients: Gradually stir the dry mixture into the wet ingredients until just combined.
  7. Scoop the Dough: Drop rounded mounds of dough onto prepared baking sheets, leaving 2 inches apart.
  8. Bake: Bake for 10-12 minutes until edges are set and tops are slightly domed.
  9. Cool it Down: Allow pies to cool on baking sheets for 5 minutes before transferring to wire racks.
  10. Frost and Assemble: Frost one flat side of each whoopie pie and sandwich with another pie.
  11. Final Touch: Roll the edges in cinnamon sugar, if desired.

Notes

The whoopie pies can be stored in an airtight container in the fridge for up to a week. For an extra special treat, serve with a scoop of vanilla ice cream.
