Ingredients

Scale
  • 2 tablespoons Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 1 medium Zucchini, diced
  • 1 can (400g) Diced Tomatoes
  • 1 litre Vegetable Broth
  • 100g Green Beans, chopped
  • 1 can (400g) mixed Canned Beans, rinsed
  • 1 tablespoon Dried Italian Herbs
  • Salt and Pepper, to taste
  • 100g Pasta (small shapes like ditalini or macaroni)
  • Parmesan Cheese, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and let it cook for about 5 minutes until it’s soft and translucent.
  2. Stir in the minced garlic and cook for another minute.
  3. Add the diced carrots and celery, stirring occasionally for about 5 minutes.
  4. Incorporate the diced zucchini, followed by the canned tomatoes and vegetable broth. Bring the soup to a gentle simmer.
  5. Toss in the chopped green beans and mixed canned beans. Add the dried herbs now.
  6. Let the soup simmer nicely for about 15-20 minutes, or until the vegetables are tender.
  7. If adding pasta, stir it in for the last 10 minutes of cooking.
  8. Taste and adjust flavors with salt and pepper.
  9. Serve hot, topped generously with grated Parmesan cheese.

Notes

For variations, consider adding pesto for freshness or crushed red pepper for a spicy kick.
