  • 1 cup onions, finely chopped
  • 1 cup bell peppers, diced
  • 2 cups sugar
  • 2 cups vinegar
  • 1 tablespoon spice mix (e.g., mustard seeds, celery seed, allspice)
  • 1 tablespoon salt

Instructions

  1. Prep your vegetables by washing cucumbers, onions, and bell peppers. Dice them into small, uniform pieces.
  2. Combine the diced cucumbers, onions, and bell peppers in a large mixing bowl. Sprinkle the salt evenly and let sit for about 30 minutes.
  3. Prepare the spicy syrup by combining sugar, vinegar, and spice mix in a large saucepan. Bring to a simmer, stirring occasionally.
  4. Add the salted veggies to the syrup. Stir gently to coat, boil, then simmer for about 10-15 minutes.
  5. Jar the relish into sterilized jars, leaving ½ inch of headspace at the top.
  6. Seal the jars with clean lids and process in a hot water bath for 15 minutes if storing long-term.

Notes

Adjust sweetness by cutting back on sugar or adding more vinegar if necessary. Experiment with spices for personalized flavors.
