Instructions

  1. Prep your ingredients: Chop, dice, and shred all your ingredients as listed above.
  2. Dicing the mangoes: Take your ripe mangoes and cut them into small, even cubes.
  3. Shred the cabbage: Roll your cabbage tightly and slice it into thin strips.
  4. Mixing it up: In a large mixing bowl, combine the shredded cabbage, diced mango, red bell pepper, shredded carrot, and chopped cilantro.
  5. Making the dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
