Low Calorie Blueberry Bread

A delightful and healthy blueberry bread that’s perfect for breakfast or snacks, made with wholesome ingredients and bursting with flavor.

Ingredients

  • 1 ½ cups white whole wheat flour
  • ½ cup sugar (or sugar substitute)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 tsp vinegar
  • 5 tbsp oil (canola, coconut, or olive)
  • 1 cup water
  • ¾ cup blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  3. Combine the wet ingredients: In another bowl, mix the vanilla extract, vinegar, oil, and water.
  4. Blend it all together: Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Gently fold in the blueberries.
  6. Pour into a greased loaf pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool: Let cool in the pan for 10-15 minutes, then transfer to a wire rack.

Notes
