Lightened Up Red White and Blue Cheesecake Parfait

A festive and guilt-free dessert featuring layers of creamy cheesecake-inspired yogurt and fresh berries, perfect for summer gatherings.

  • 1 cup nonfat plain Greek yogurt
  • 1 Tbsp Jello brand Sugar Free Cheesecake Pudding Mix
  • 1 cup strawberries or raspberries
  • 1/2 cup blueberries

Instructions

  1. Prepare the Creamy Cheese Mixture: In a medium bowl, combine the nonfat Greek yogurt and the sugar-free cheesecake pudding mix. Stir well until the mixture is smooth and creamy. For a lighter texture, whisk the yogurt.
  2. Wash Your Berries: Rinse the strawberries (or raspberries) and blueberries under cold water. Slice strawberries if using.
  3. Layer it Up: In serving glasses, begin with a spoonful of the yogurt mixture, then a layer of strawberries, and a layer of blueberries. Repeat the layers.
  4. Finish with a Topper: Add a dollop of yogurt and more berries on top, and drizzle honey or agave if desired.
  5. Chill and Serve: Refrigerate for about 30 minutes before serving to meld flavors.

Notes

Parfaits can be made a day in advance. Store covered in the refrigerator.
