  • 1 cup heavy cream
  • ⅓ cup sugar
  • ¼ teaspoon kosher salt
  • ½ tablespoon lemon zest
  • 2½ tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Lemons: Start by washing your lemons thoroughly. Using a zester, grate the outer yellow layer of the skin from one lemon, being careful not to include the bitter white pith. Then, juice two and a half lemons until you have precisely 2½ tablespoons of fresh lemon juice.
  2. Combine Ingredients: In a medium saucepan, pour in your heavy cream, sugar, kosher salt, and zest. Whisk them together over medium heat until the sugar is fully dissolved.
  3. Add the Citrus: Remove the saucepan from the heat and whisk in your freshly squeezed lemon juice and vanilla extract.
  4. Strain for Smoothness: Pour the mixture through a fine mesh sieve into a bowl or measuring cup.
  5. Chill and Set: Distribute the mixture into small serving cups or ramekins and refrigerate for at least 4 hours, or until set.
  6. Serve and Savor: Garnish with fresh berries or lemon zest before serving.

Notes

For a dairy-free version, substitute heavy cream with coconut cream. High-quality lemons enhance the flavor immensely.
