Lemon Brownies

Deliciously soft and chewy lemon brownies with a zesty flavor that brighten any occasion.

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)
  • 1 tsp lemon zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix the dry ingredients in a medium bowl: flour, sugar, and salt.
  3. Cream the butter in another bowl until light and fluffy.
  4. Add the eggs, lemon zest, lemon juice, and vanilla extract to the creamed butter and beat until combined.
  5. Combine the wet and dry mixtures until just combined.
  6. Pour the batter into the greased pan and smooth the top.
  7. Bake for 20-25 minutes, until a toothpick comes out with a few moist crumbs.
  8. Cool in the pan for 15-20 minutes, then whisk glaze ingredients together and pour over brownies.
  9. Slice into squares and serve at room temperature or slightly chilled.
