Lasagna Soup

A cozy comfort food that combines layers of traditional lasagna into a delightful soup form, perfect for any day of the week.

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Sauté the Aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Once it’s shimmering, add the chopped onions and sauté for about 5 minutes, or until softened and translucent. Then, throw in the minced garlic and sauté for another minute until fragrant.
  2. Brown the Beef: Next, add the ground beef to the pot, breaking it up with a wooden spoon. Cook until it’s browned and no longer pink, about 6-8 minutes. Drain any excess fat if necessary.
  3. Add the Tomatoes and Broth: Once the beef is browned, pour in the crushed tomatoes and vegetable broth. Bring the mixture to a gentle simmer, stirring occasionally.
  4. Stir in Lasagna Noodles: After simmering, add your broken lasagna noodles to the pot and stir well to combine. Let it simmer for another 10-12 minutes, or until the noodles are tender but not mushy.
  5. Cheese Time!: Remove the pot from heat and stir in the ricotta, mozzarella, and Parmesan cheeses until well combined.
  6. Season & Serve: Taste your soup and season with salt and pepper as needed. Serve it hot, garnished with fresh basil leaves.
