Kohlrabi, Carrot & Apple Salad

A refreshing and crunchy salad combining kohlrabi, carrots, and apples with a vibrant dressing.

Ingredients

  • 200 g Kohlrabi, peeled and julienned
  • 150 g Carrots, peeled and julienned
  • 1 large Apple, washed and diced
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Honey
  • Salt to taste
  • Pepper to taste
  • A few fresh parsley leaves, chopped

Instructions

  1. Prep your veggies by washing kohlrabi and carrots thoroughly.
  2. Cut the apple into small cubes, keeping the skin on.
  3. Mix the dressing by whisking together lemon juice, olive oil, honey, salt, and pepper.
  4. Combine kohlrabi, carrots, and apple in a large bowl and toss with dressing.
  5. Finish with chopped parsley and toss gently.

Notes

Consider adding nuts or seeds for extra crunch. This salad can be made ahead of time, just add dressing right before serving.
