Kohlrabi, Carrot & Apple Salad

A refreshing salad that combines the crunch of kohlrabi, sweetness of apple, and zing of lemon juice.

Ingredients

  • 200 g Kohlrabi, peeled and julienned
  • 150 g Carrots, peeled and julienned
  • 1 large Apple, washed and diced
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 teaspoon Honey
  • Salt to taste
  • Pepper to taste
  • A few fresh parsley leaves, chopped

Instructions

  1. Prep Your Veggies: Wash the kohlrabi and carrots thoroughly, peel them, and julienne into thin strips.
  2. Cut the Apple: Wash and dice the apple into small cubes, keeping the skin on.
  3. Mix the Dressing: Whisk lemon juice, olive oil, honey, salt, and pepper in a small bowl.
  4. Combine Everything: In a large bowl, mix kohlrabi, carrots, and apple. Add the dressing and toss gently.
  5. Finish with Fresh Herbs: Sprinkle chopped parsley over the top and give it a gentle toss.

Notes

This salad can be made ahead of time, but add the apple and dressing right before serving for best results.
