  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/3 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Cook your pasta according to the package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process, and set aside.
  2. Prepare the Corn: If you’re using fresh corn, slice the kernels off the cob. For frozen corn, thaw it in the microwave for 2-3 minutes.
  3. Combine Ingredients: In a large mixing bowl, combine the cooked pasta, corn, halved cherry tomatoes, diced red onion, and chopped cilantro. Mix everything well.
  4. Make the Dressing: In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, and a sprinkle of salt and pepper until smooth and well-combined.
  5. Dress the Pasta: Pour the dressing over the pasta and veggies. Gently toss to coat everything evenly.
  6. Chill and Serve: Cover the salad with plastic wrap and refrigerate for at least 30 minutes. When ready to serve, give it another quick toss.
