  • 14 oz pasta (Barilla rotini or penne)
  • 1 large cucumber (peeled and sliced into 1/2-inch half-moons)
  • 18 oz cherry tomatoes
  • 3/4 cup olives (Mezzetta sliced kalamata olives)
  • 5 oz feta cheese
  • 1/2 red onion
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 4 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 tsp dried oregano
  • 1 tsp honey
  • 3 garlic cloves (freshly pressed)
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (usually 8-10 minutes). Reserve about half a cup of pasta water before draining.
  2. Prep the Veggies: While the pasta is cooking, slice the cucumber into half-moons and halve the cherry tomatoes.
  3. Chop the Onion and Herbs: Finely chop the red onion and parsley.
  4. Make the Dressing: In a medium bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey, oregano, garlic, salt, pepper, and red pepper flakes.
  5. Combine: Transfer the cooked pasta to a large mixing bowl. Add in the cucumber, cherry tomatoes, olives, feta, red onion, and parsley. Drizzle the dressing over the salad while it’s still warm.
  6. Toss and Serve: Gently toss all the ingredients together until well combined.
  7. Chill: For a refreshing touch, pop it in the fridge for at least 30 minutes before serving.

Notes

This pasta salad tastes even better after sitting for a few hours or overnight as the flavors meld. Adjust the seasoning to your liking!
