Cherry Breakfast Bars

Delightful cherry-filled breakfast bars, perfect for busy mornings or lazy weekends.

Ingredients

  • 1 ½ cup rolled oats
  • ½ cup flour
  • ½ cup light brown sugar
  • ⅓ cup chopped almonds
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup coconut oil, melted
  • 2 ½ cups Northwest sweet cherries, pitted and chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix the rolled oats, flour, brown sugar, almonds, baking soda, and salt in a large mixing bowl.
  3. Add the melted coconut oil into the dry mixture and stir until well incorporated.
  4. Set aside about ¾ of the mixture and press it evenly into the bottom of the prepared baking pan.
  5. Prepare the cherry filling by tossing the chopped cherries with lemon juice, maple syrup, and cornstarch in another bowl.
  6. Spread the cherry mixture evenly over the oat base in the baking pan.
  7. Top with the remaining oat mixture and gently pat it down.
  8. Bake for 30-35 minutes until the top is golden brown and the cherries are bubbling slightly.
  9. Cool completely in the pan before cutting into squares.

Notes

These bars can be served warm or at room temperature. They pair wonderfully with Greek yogurt or vanilla ice cream.
