Cherry Breakfast Bars

Delightful breakfast bars packed with sweet and tart Northwest cherries, nestled in a buttery, oat-filled base.

  • 1 ½ cup rolled oats
  • ½ cup flour
  • ½ cup light brown sugar
  • ⅓ cup chopped almonds
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup coconut oil, melted
  • 2 ½ cups Northwest sweet cherries, pitted and chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix the rolled oats, flour, brown sugar, almonds, baking soda, and salt in a large bowl.
  3. Add the melted coconut oil into the dry mixture and stir until well incorporated.
  4. Set aside about ¾ of the mixture and press it evenly into the bottom of the prepared baking pan.
  5. Prepare the cherry filling by tossing the pitted cherries with lemon juice, maple syrup, and cornstarch.
  6. Assemble the bars by spreading the cherry mixture evenly over the oat base.
  7. Top with the remaining oat mixture and gently pat it down.
  8. Bake in the preheated oven for 30-35 minutes or until golden brown.
  9. Cool completely in the pan before lifting out and cutting into squares.

Notes

These bars can be served warm or at room temperature. Pair with Greek yogurt or vanilla ice cream for a delightful treat.
