Hearty Ham Soup

  • 2 celery stalks, diced
  • 4 potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup green beans, chopped

  • 2 tablespoons olive oil

Instructions

  1. Sauté the aromatics: Begin by heating the olive oil in a large pot over medium heat. Once hot, toss in the chopped onion, diced carrots, and celery. Sauté for about 5 minutes until the onion becomes translucent, stirring occasionally.
  2. Add the ham: Next, add the diced ham to the pot. Stir it through the aromatic mix and let it cook for about 3-4 minutes.
  3. Toss in the potatoes and broth: Add the peeled and cubed potatoes and pour in the chicken broth. Add thyme, bring to a gentle boil, then reduce to a simmer. Let it bubble away for about 15 minutes.
  4. Incorporate the green beans: After 15 minutes, add the chopped green beans. Stir and let simmer for another 10-15 minutes until tender.
  5. Season it up: Before serving, taste the soup and season with salt and pepper to your liking.
