Homemade Peach Jam

A delightful homemade peach jam that captures the essence of summer, perfect for spreading on biscuits or toast.

  • 4 cups ripe peaches (about 8 medium-sized)
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract (optional)
  • 1 tablespoon pectin (optional, for thicker jam)

Instructions

  1. Prepare Your Peaches: Peel the peaches, score an ‘X’ on the bottom, blanch in boiling water for 30 seconds, then transfer to an ice bath to remove skins. Slice into chunks.
  2. Mix and macerate: Combine peach chunks with granulated sugar in a bowl and let sit for 30 minutes.
  3. Cook the Jam: Transfer mixture to a pot, bring to a gentle boil while stirring frequently for 10-15 minutes.
  4. Add Lemon Juice and Pectin: Stir in lemon juice and pectin, bring to a rolling boil for about 10 minutes.
  5. Test for the Right Consistency: Use the wrinkle test on a plate to check thickness.
  6. Jar It Up: Ladle hot jam into clean jars, leaving headspace, and seal with lids.
  7. Cool and Store: Let jars cool at room temperature to seal, then store in pantry or fridge.

Notes

Experiment with flavors by adding spices or other fruits. Fresh, in-season peaches yield the best results.
