The Perfect Homemade Sour Cherry Pie

A nostalgic sour cherry pie recipe that combines sweet and tart cherries in a flaky crust, perfect for any occasion.

  • 2 cups sour cherries, pitted
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon pure almond extract
  • 1 tablespoon cornstarch
  • 1 tablespoon butter, cut into small pieces
  • 1 package pie crusts (or homemade dough)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Prepare the cherries by pitting them if not done already.
  2. Make the cherry filling by combining the cherries, sugar, lemon juice, almond extract, and cornstarch.
  3. Roll out the crust to about 1/8 inch thickness.
  4. Add the cherry filling into the crust, spreading it evenly.
  5. Prepare the top crust and either cut slits for steam or create a lattice.
  6. Egg wash the crust with the egg and milk mixture.
  7. Bake in a preheated oven at 425°F for 15 minutes, then lower to 350°F and bake for an additional 30-35 minutes.
  8. Cool for at least two hours before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. For variations, try adding chocolate chips or spices.
