  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios
  • 1/4 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the greens: Rinse your mixed salad greens under cool water to remove any dirt. Pat them dry with a clean kitchen towel or use a salad spinner to remove excess moisture.
  2. Chop the veggies: Toss the greens in a large bowl, then thinly slice the red onion and add them to the bowl.
  3. Add the blueberries: Gently fold in the fresh blueberries.
  4. Throw in the pistachios: Toss them into the mix.
  5. Crumble the feta: Sprinkle crumbled feta cheese over the top of your salad mixture.
  6. Make the dressing: In a small bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper.
