  • 1 sheet of puff pastry
  • 4 oz goat cheese, softened
  • 1/4 cup fig preserves
  • 1 tsp fresh thyme, chopped
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the puff pastry by rolling it out on a floured surface to about 1/8 inch thick.
  3. Mix the filling by combining softened goat cheese, fig preserves, and chopped thyme. Add salt and pepper.
  4. Spread the filling over the puff pastry, leaving a small border around the edges.
  5. Roll the pastry tightly into a log and pinch the ends to seal.
  6. Slice the rolled pastry into 1-inch pinwheels.
  7. Prepare a baking sheet lined with parchment paper and place the pinwheels on it.
  8. Brush each pinwheel with the egg wash.
  9. Bake for about 15-20 minutes or until golden and puffed.
  10. Enjoy your creation warm from the oven!

These pinwheels can be made ahead of time and baked when ready to serve. Pair with extra fig preserves for dipping.
