Easy Thai Noodle Soup

A warm, comforting noodle soup packed with flavors and simplicity, perfect for cozy nights.

Ingredients

  • Ramen noodles
  • Chicken or vegetable broth
  • Sweet chili sauce
  • Lime juice
  • Soy sauce
  • Green onions
  • Cilantro
  • Sliced chili peppers
  • Bean sprouts

Instructions

  1. Cook the Ramen Noodles: Begin by boiling a medium saucepan of water. Once it’s at a rolling boil, add the ramen noodles. Cook according to package instructions, usually around 3-5 minutes, until they are just tender. Drain and set aside.
  2. Prepare the Broth: In a large pot, combine the chicken or vegetable broth and bring to a gentle simmer over medium heat. Stir in the sweet chili sauce, soy sauce, and lime juice. Adjust the sweetness or acidity to taste.
  3. Add Fresh Ingredients: Toss in the sliced chili peppers and green onions. Let the peppers simmer for a minute to infuse heat into the broth.
  4. Combine the Noodles and Broth: Gently add the cooked ramen noodles to the pot, letting them soak up the flavors for just a minute.
  5. Finish with Freshness: Just before serving, add in the bean sprouts and cilantro.
  6. Taste and Adjust: Give your soup a taste! Add more lime juice or soy sauce if needed to suit your preferences.
  7. Serve Hot: Ladle the soup into bowls and garnish with extra green onions and cilantro.
