Autumn French Onion Grilled Cheese

A cozy and comforting twist on the classic grilled cheese, featuring savory caramelized onions and rich gouda, all sandwiched between crusty sourdough bread.

  • 4 slices of sourdough bread
  • 2 tablespoons butter
  • 1 large onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 4 slices of gouda cheese
  • 4 slices of prosciutto
  • Salt and pepper to taste

Instructions

  1. Caramelize the onions by heating 1 tablespoon of butter in a large skillet over medium heat. Add the onion and sprinkle with salt; cook until golden brown, about 20–30 minutes.
  2. Add balsamic vinegar to the caramelized onions and stir to combine. Cook for an additional 5 minutes.
  3. Assemble the sandwich by spreading butter on one side of each bread slice. Layer gouda, caramelized onions, prosciutto, and another slice of gouda, then top with another bread slice.
  4. Grill the sandwich in the skillet for 3–4 minutes on each side, until golden brown and the cheese is melted.
  5. Slice the sandwich in half and serve warm.
