Moist Zucchini Orange Bread

A vibrant twist on classic zucchini bread, infused with the zesty brightness of orange, offering moist and comforting goodness.

Ingredients

  • 2 large Eggs
  • 1 cup Sugar
  • 1/2 cup Vegetable Oil
  • 1/2 cup Orange Juice
  • 1 cup Shredded Unpeeled Zucchini
  • 1 1/2 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tbsp Grated Orange Zest
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • 1/2 cup Chopped Nuts (optional)
  • 1 cup Powdered Sugar
  • 2 tbsp Orange Juice (for glaze)

Instructions

  1. Preheat the Oven to 350°F (175°C).
  2. Prepare Your Pan by greasing a 9×5-inch loaf pan.
  3. Mix the Dry Ingredients in a medium bowl.
  4. Combine Wet Ingredients in a large mixing bowl.
  5. Grate the Zucchini and remove excess moisture.
  6. Fold the Dry Ingredients into the Wet Ingredients along with the zucchini, orange zest, and nuts.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool the Bread in the pan for 10-15 minutes, then transfer to a wire rack.
  10. Make the Glaze by mixing powdered sugar with orange juice.
  11. Glaze and Serve the bread once cooled.

Notes

Great with coffee or tea, and can be packed as a snack. Try adding chocolate chips or dried cranberries for a twist!
