Easy Sour Cherry Tarts

Delightful tarts with a flaky crust and luscious filling bursting with the tartness of sour cherries.

Ingredients

  • 6 cups pitted sour cherries
  • 2 cups white sugar
  • 1 heaping tablespoon cornstarch
  • 23 tablespoons water
  • 1 package pastry tart shells (approximately 30 in a package)
  • Whipped cream for garnish
  • Optional: Edible flowers and thyme

Instructions

  1. Prepare your tart shells by preheating your oven to 375°F (190°C). If using individual tart shells, place them on a baking sheet.
  2. Mix the filling in a large mixing bowl by combining the pitted sour cherries, white sugar, cornstarch, and water. Toss gently until well coated.
  3. Fill each tart shell with the cherry mixture, being careful not to overfill.
  4. Bake for about 20-25 minutes or until the pastry is golden brown and the filling is bubbling.
  5. Cool for a few minutes on a wire rack, then top with whipped cream and optional garnishes.

Notes

For variations, consider adding spices or chocolate drizzles. Can be prepared a day in advance and baked just before serving.
