Easy 4th of July No-Bake Cheesecake Parfaits

A refreshing no-bake cheesecake dessert layered with creamy goodness, graham cracker crust, and fresh berries, perfect for summer celebrations.

  • 8 oz (225g) full-fat cream cheese
  • 1 cup (240ml) heavy cream
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups (150g) graham cracker crumbs
  • 5 tbsp (70g) butter, melted
  • 1 ½ cups (225g) fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Prep your ingredients: Before you dive in, make sure to gather all your ingredients.
  2. Make the graham cracker crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until all crumbs are evenly coated.
  3. Layer the crust: In your parfait glasses or jars, spoon about two tablespoons of the graham cracker mixture into the bottom of each.
  4. Prepare the cheesecake filling: In a mixing bowl, beat the cream cheese until it’s smooth. Then add in the powdered sugar and vanilla extract.
  5. Whip the heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
  6. Layer the cheesecake filling: Spoon a generous layer of the cheesecake filling over the crust in each parfait glass.
  7. Add the berries: Carefully add a layer of fresh berries on top of the cheesecake filling.
  8. Repeat the layers—graham cracker crust, cheesecake filling, and berries—until you reach the top.
  9. Chill the parfaits in the refrigerator for at least 2 hours to let them set nicely.

Notes

For added flavor, consider macerating your berries with sugar beforehand. These parfaits can last 2-3 days in the refrigerator and can be made ahead of time.
