DIY Ripe Pickle Relish

A delightful homemade pickle relish recipe that captures the essence of summer, filled with fresh vegetables and tangy vinegar.

  • 3 cups ripe or overripe cucumbers, finely chopped
  • 1 cup onions, finely chopped
  • 1 cup bell peppers, finely chopped
  • 2 cups vinegar (white or apple cider)
  • 1 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare your ingredients by rinsing cucumbers, onions, and bell peppers under cool water, then pat dry.
  2. Chop the cucumbers, onions, and bell peppers finely and uniformly.
  3. Mix chopped veggies with salt in a large bowl, let sit for 30 minutes.
  4. Prepare the vinegar mixture by whisking together vinegar, sugar, mustard seeds, celery seeds, turmeric, and black pepper in a saucepan over medium heat until sugar dissolves.
  5. Combine the veggies with the vinegar mixture and simmer on low for 15-20 minutes.
  6. Jar the hot pickle relish into sterilized jars, leaving half an inch of space at the top.
  7. Let the jars cool at room temperature before refrigerating for at least 24 hours before serving.

Notes

For a spicy version, add diced jalapeños or cayenne pepper. Consider using apple cider vinegar for a fruity note.
