Cucumber Caprese Salad

A vibrant and refreshing twist on the classic Caprese salad, featuring cucumbers, cherry tomatoes, mozzarella, and fresh basil, all drizzled with olive oil and balsamic glaze.

  • 1 English cucumber or 2 Persian cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 8 oz mozzarella pearls (or cubed fresh mozzarella)
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh basil leaves, torn or chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (or reduction)
  • Salt and freshly ground black pepper, to taste
  • Optional: crushed red pepper flakes

Instructions

  1. Prep Your Produce: Wash all vegetables thoroughly. Thinly slice cucumbers and halve cherry or grape tomatoes.
  2. Assemble the Salad: In a large bowl, layer the cucumbers, then add tomatoes, mozzarella, and red onion.
  3. Fold in the fresh basil leaves.
  4. Dress It Up: Drizzle with olive oil and balsamic glaze, then season with salt, pepper, and optional crushed red pepper flakes.
  5. Toss and Serve: Gently toss until well-coated and serve immediately.

Notes

Allow the salad to sit for 10-15 minutes before serving for enhanced flavor. Best enjoyed fresh but can be stored in an airtight container for up to a day.
