Cheesy Zucchini Breadsticks

Delicious Cheesy Zucchini Breadsticks, perfect as a snack or appetizer, sneaking in veggies with cheesy goodness.

  • 2 medium zucchinis (about 2 cups shredded)
  • 2 large eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese (for topping)
  • Optional: fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grate the zucchinis until you have about 2 cups and squeeze out excess moisture.
  3. Mix the squeezed zucchini with eggs, ½ cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. Prepare a baking sheet lined with parchment paper and shape the zucchini mixture into a rectangle about ½ inch thick.
  5. Bake for 20-25 minutes until edges are golden brown.
  6. Add the remaining mozzarella cheese on top.
  7. Bake again for 10-15 minutes until cheese is bubbly and golden.
  8. Cool for a few minutes and slice into stick shapes.
  9. Garnish with fresh herbs, if desired.

Notes

Be sure to squeeze out the zucchini’s moisture to avoid soggy breadsticks.
