Garlic Parmesan Roasted Sweet Potatoes

A delicious blend of sweet and savory, these Garlic Parmesan Roasted Sweet Potatoes will rock your taste buds and become a kitchen staple.

Ingredients

  • 2 large Sweet Potatoes, peeled and cubed
  • 4 cloves Garlic, minced
  • 1 cup Parmesan Cheese, grated
  • 3 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Fresh Herbs, optional for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes if desired, then cut them into evenly sized cubes, about 1-inch.
  3. Combine the minced garlic and olive oil in a large mixing bowl.
  4. Add the sweet potato cubes to the bowl and toss to coat them well.
  5. Sprinkle the salt and pepper over the sweet potatoes and toss again.
  6. Line a baking sheet with parchment paper and spread the sweet potatoes in a single layer.
  7. Roast for about 25–30 minutes, flipping halfway through, until golden and crispy.
  8. Sprinkle the grated Parmesan over the sweet potatoes once they are out of the oven.
  9. Toss with fresh herbs for garnish before serving.

Notes

For a vegan version, substitute nutritional yeast for Parmesan cheese.
