Leftover Pot Roast Patty Melts

Transform your leftover pot roast into a deliciously crispy and gooey comfort food classic with these Patty Melts.

  • 23 cups leftover shredded pot roast
  • 8 slices sturdy bread (sourdough, rye, or thick white)
  • 3 tablespoons butter (plus more for the bread)
  • 2 medium onions (thinly sliced)
  • Salt and pepper to taste
  • 4 slices Provolone cheese
  • 4 slices cheddar cheese
  • 1/2 cup mayonnaise
  • 3 tablespoons steak sauce
  • 1/8 teaspoon pepper

Instructions

  1. Prepare the onions: Heat 1 tablespoon of butter in a large skillet over medium heat. Add sliced onions and sprinkle with salt. Cook until caramelized, about 15-20 minutes.
  2. Mix your filling: In a mixing bowl, combine shredded pot roast, salt, pepper, mayonnaise, and steak sauce. Stir until well blended.
  3. Assemble the melts: Butter one side of 4 slices of bread. Layer on unbuttered side with Provolone cheese, pot roast mixture, caramelized onions, and cheddar cheese. Top with another slice of buttered bread, butter side out.
  4. Cook the patty melts: Preheat skillet and add assembled sandwiches. Cook for 4-5 minutes until golden brown and crispy.
  5. Flip and finish: Carefully flip the sandwiches and cook for another 4-5 minutes until both sides are golden and cheese is melted.
  6. Slice and serve: Let the sandwiches rest, then cut in half and enjoy!

Notes

Serve with homemade potato wedges or a fresh salad. For an extra kick, have steak sauce on the side for dipping!
