Irresistibly Crunchy Garlic Parmesan Roasted Zucchini

A delightful recipe for crispy, golden zucchini rounds coated in garlic and Parmesan, perfect as a side dish or snack.

  • 4 medium zucchinis, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the zucchinis: wash, dry, and slice into rounds.
  3. Create a mixture of zucchinis, olive oil, minced garlic, Italian seasoning, salt, and black pepper in a bowl.
  4. Add grated Parmesan and toss to coat.
  5. Arrange the zucchini on a lined baking sheet in a single layer.
  6. Roast for 20–25 minutes, flipping halfway through until golden.
  7. Garnish with parsley and serve hot.

Notes

For a spicy kick, add red pepper flakes to the oil mixture. Nutritional yeast can be used as a vegan substitute for Parmesan.
