Street Corn Pasta Salad

A creamy and zesty pasta salad that brings the flavors of street corn into a fun summer dish.

Ingredients

  • 400g Pasta (Fusilli or Penne)
  • 2 Roasted Corn Cobs
  • 3 Green Onions
  • 1 Shallot
  • 2 Jalapeños
  • 1/2 Cup Cilantro
  • 1 Cup Cotija Cheese
  • 1 Cup Sour Cream
  • 1/2 Cup Mayo
  • 3 Cloves Garlic
  • Juice and Zest of 1 Lime
  • 1 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 1 tsp Salt & Pepper

Instructions

  1. Cook the Pasta by boiling salted water and cooking until al dente; drain and rinse with cold water.
  2. Roast the Corn until charred; let cool and slice off the kernels.
  3. Prep the Vegetables by chopping green onions, shallots, and jalapeños; finely chop cilantro.
  4. Mix the Dressing with sour cream, mayo, lime juice, garlic, smoked paprika, chili powder, salt, and pepper.
  5. Combine the pasta, roasted corn, veggies, and dressing; fold in the cotija cheese gently.
  6. Chill the salad in the fridge for at least 30 minutes before serving.

Notes

Adjust spice level by removing jalapeño seeds or substituting with bell pepper. Add grilled chicken for extra protein.
