Ultimate Roasted Tomato Soup

Ingredients

  • 2 pounds fresh tomatoes
  • 1 medium onion
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • ½ cup heavy cream
  • Salt & pepper to taste
  • Fresh basil (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prep the tomatoes by washing and cutting them in half.
  3. Slice the onion into wedges and prepare the garlic.
  4. Toss the tomatoes, onion, and garlic with olive oil, salt, and pepper.
  5. Roast for 30-35 minutes until blistered and caramelized.
  6. Blend the roasted veggies until smooth, adding cream for richness.
  7. Taste and adjust seasoning, adding sugar if too acidic.
  8. Serve garnished with basil and enjoy!
