Pumpkin Sausage Soup

A warm and comforting pumpkin sausage soup that balances sweetness, savoriness, and spice, perfect for chilly evenings.

Ingredients

Scale
  • 2 tablespoons Olive Oil
  • 1 pound Sausage (Italian or preferred type)
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can (15 oz) Pumpkin Puree
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Cinnamon
  • Salt and Pepper, to taste

Instructions

  1. Sauté the Aromatics: In a large pot, heat about two tablespoons of olive oil over medium heat. Once the oil is shimmering, add the chopped onion. Sauté for 3-5 minutes until translucent, then toss in minced garlic and cook for another minute until fragrant.
  2. Brown the Sausage: Push the onion and garlic mixture to the side and add your sausage to the pot. Use a wooden spatula to break it apart as it cooks until browned.
  3. Incorporate the Pumpkin: Stir in the pumpkin puree and cook together with the sausage and onion for a couple of minutes.
  4. Pour in the broth: Add the vegetable or chicken broth, scraping the bottom of the pot, and bring to a gentle simmer.
  5. Lower the heat and stir in the heavy cream, or coconut milk if preferred. Let it simmer for about 10-15 minutes.
  6. Adjust the seasoning: Taste the soup and adjust with salt and pepper according to preference.
  7. Simmer on low for a little longer to deepen flavors before serving.

Notes

Garnish with a drizzle of cream or fresh herbs for added flavor. Serve with homemade garlic bread or a crunchy baguette.
